Hoppin’ John Soup

Ingredients: 1 small onion (diced); 1 1/2 cup chopped celery; 2 cups chopped carrot; 2 tablespoons avocado oil; 1 tablespoon minced garlic; 1 red bell pepper (diced); 1 yellow bell pepper (diced); 1 bunch collard greens (center ribs removed and leaves roughly chopped); 1 teaspoon dried thyme; 1 teaspoon dried marjoram; 3 cups diced ham (rind removed, preferably uncured); 8 cups cooked black-eyed peas (divided*); 8 to 10 cups chicken bone broth (prepared with 1 smoked ham hock (optional) divided**); Sea salt and freshly ground pepper (to taste); Frank’s Red Hot Sauce (or similar)
